What plans have you for dinner?
I am imagining olives, walnuts, leaves, roasted tomatoes, goats cheese. It sounds a lot like Bruschetta.
It is too good not to share with you!
1 roma tomato
good pinch of dried rosemary
1 handful of spinach
1/2 cup of walnuts
tsp olive oil or coconut oil
Roast halved lengthways cut roma tomato drizzled in olive oil for 15 – 20 minutes at 200 degrees or until cooked through and fragrant.
Saute spinach in couple of tablespoons of water until wilted.
Grind walnuts in food processor, until crumbed.
Add olives and process until mixed.
Add roasted tomatoes and process a little to mix. Mix through with spoon.
Add spinach and process lightly until combined.
I am wondering how to eat this nut pate. It would be nice wrapped up in leaves, I have none. What about with vegetable sticks as an entree?
Vegetable sticks or wholegrain crackers. Pretty delicious!!
