Do you ever put dinner on in winter, and knowing that it will take 40 mins – an hour to bake, are feeling rather peckish? I decided to design a dip out of whatever I could find in my fridge for these moments. If you haven’t guessed, my favourite vegetable is beetroot. cos lettuce wraps – Beauty detox assignment #8

As you can imagine, I am looking forward to something LIGHT for dinner. Kimberly Snyder set the task this week for cos lettuce wraps. winter fruit and coconut water smoothie

This weeks beauty detox challenge was a summer fruit smoothie, but since it is winter here in Australia, I made a winter fruit smoothie, jam packed with vitamin C. Ingredients: 1 orange 1 kiwi fruit 1 pear – chopped 1 glass of coconut water Directions: Blend all ingredients in a blender and enjoy the sweetness of the coconut water with ripe winter fruits. beauty detox recipe challenge #4 – vegetable dip

Ingredients: 1/2 ripe avocado juice of half a lemon 1 tbsp olive oil handful of walnuts 1/2 bunch of basil torn 5 baby beetroots (roasted or pickled) 10 olives, pipped and chopped 2-4 tablespoons of water Directions: Add ingredients one by one to food processor (preferable) or GOOD quality blender. amazing lunch!! the lentil curry, mellows out the tangy flavour of the salmon, lemon and pepper.
